Jumpstart your busy mornings this week with a quick and easy Instant Pot quinoa recipe. It’ s tasty and healthy… toasted almonds, apples, and protein-rich quinoa will keep you satisfied throughout the morning.
Toasted Almond and Apple Quinoa (Recipe by Oxmoor House)

Under pressure time: 6 Mins
Yield: 4 Servings
2/3 cup slivered almonds
1 cup uncooked quinoa
2 cups of water
1/3 cup dried tart cherries
One tablespoon canola oil
¼ teaspoon salt
One teaspoon vanilla extract
1 cup sliced Braeburn apple
One tablespoon sugar (or honey)
¼ teaspoon ground cinnamon
Remove the lid from a 6-quart instant pot. Press Sauté and use Adjust to select “Normal” mode. Add almonds to inner pot; cook stirring constantly, 2 to 3 minutes or until lightly browned. Remove from the cooker and set aside.
Add quinoa to the cooker, cook 1 minute or until lightly browned, stirring frequently. Stir in 2 cups water and the next three ingredients (through salt). Turn the Instant Pot off.
Close and lock the lid of the Instant Pot. Turn the steam release handle to the “Sealing” position. Press Manual, select “High Pressure,” and use – or + to choose 6 minutes of pressure cooking time. When time is up, turn the cooker off. Open the cooker using Natural Pressure Release. Stir in vanilla.
While cooker stands, combine almonds, apples, sugar or honey, and cinnamon, tossing to coat. Divide quinoa mixture among four bowls; top with apple mixture.
