I’m really into salads lately and it doesn’t always have to be lettuce with tomatoes. I tried this shrimp pad Thai salad as my go-to dish for the week. I saw the recipe in a WebMD magazine and it’s as good as it promised to be. Crunchy, healthy and the dressing gives it a nice flavor. Also, it’s very easy to prepare and shop for.

Ingredients:
1 head Napa cabbage, shredded
1 lbs cooked deveined shrimp
carrots, snow peas, red sweet pepper, bottled Asian salad dressing, roasted unsalted peanuts, green onions.

Directions:
In a large bowl toss together cabbage, snow peas, chopped red pepper, bean sprouts, carrots, and cilantro with ¼ cup dressing to combine. Top with shrimps, chopped peanuts, and chopped green onions.
