I love a good potato salad and had way too much last week. Most store-bought salads are full of fat and mayonnaise and for this week I’m going to make my own one. Instead of the mayonnaise I use Greek yogurt which adds extra protein, probiotics and has a creamy texture. Added chives and radishes makes it a healthy and crisp summer dish.
The recipe is very easy, and it only takes about 10 minutes to prepare, without the cooking time for the potatoes. Guten Appetit. 😊

Healthy potato salad recipe:
1.5 red potatoes, boiled
1 cup plain non-fat Greek yogurt
1/4 cup sour cream
1 Tbs pickle juice
1 Tbs mustard
Fresh parsley, chives and radishes

Directions:
Boil the potatoes and let them cool down. Combine yogurt, sour cream, pickle juice and mustard in a bowl and whisk it together until it’s a smooth texture. Cut the potatoes into half and add to the bowl, mix the potatoes in the dressing until they are all covered. Season with pepper and salt.
