Getting ready for a summer party with salmon, couscous and veggie pouches. I did them the other day for a party and they were a huge hit and nd they are so easy to prepare ahead.

Preheat oven to 400 F and cut out 15 inch squares of foil or parchment paper. In the center make a bed of pre-cooked couscous and add marinated salmon and veggies – I use broccolini & peppers. Add olive oil, garlic, fresh lemon juice, rosemary, salt & pepper. Then bring 2 sides of foil together, food over down the middle to seal and create rectangles. Fold open ends under and tuck beneath the packets. Bake for 15 min until the salmon flakes easily and serve immediately.
