MEALPREP SUNDAY. I know, meal prep on a Sunday sounds like a chore. But if you stay with it for a couple of weeks, you start looking forward to having meals in your fridge, and it becomes a habit. My go-to meal for the week is an easy beef broccoli stir fry. Served with brown rice and it’s a tasty and nutritious meal. Guten Appetit. 😊

Ingredients:
2 cloves garlic, minced
1 onion, chopped
8 ounces broccoli florets
3/4 cup chicken broth
3/4 pound tri-tip or flank steak, thinly sliced.

Directions:
In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm. Stir-fry onion in remaining oil for 4-5 minutes until softened. Add the broccoli and cook for 3 minutes until the broccoli is tender but still crisp. Return beef to pan.
