Quick and colorful salad for lunch. Arugula with fennel, orange and red onion topped with a mustard honey dressing.
Combine arugula, a thinly sliced fennel bulb, a sliced small red onion and 2 naval oranges, cut into segments.
For the dressing whisk together 1 tsp Dijon mustard, 2 tsp honey and 5 tbsp white vinegar. Whisking constantly and drizzle in 1/2 cup of olive oil. Toss over salad and enjoy.
